Abstract

In approximately 480 B.C. a Chinese philosopher KAO TSU said: “Appetite for food and sex is nature”. However, the range of variations is infinitely wider in food. In fact, the importance of food in understanding and culture and civilization lies exactly in its infinite variability, although variability in food the people eat is not essential for survival.
